Iva Lee Owsley and I became close as fellow members of Cecilia Homemakers. With her recent passing, it seems appropriate to revisit a few special words about her published recipes in June 2011 plus some of her special ones as a tribute to her memory.

A fellow member of Cecilia Homemakers, Debbie McQueary, said about Iva Lee, “I think she is a lovely woman, inside and out, and I enjoy the stories she shares about her family.”

Cecilia Homemakers President Byrle Thomas added, “She is a wonderful friend, always pleasant and smiling and we had one thing in common, we have both been a farm wife.”

Strawberry Salad

1 small box strawberry gelatin
1 cup crushed pineapple
1 cup sliced bananas
1 cup fresh sliced strawberries
½ cup chopped pecans

Dip sliced bananas in lemon juice. Prepare gelatin according to box directions. Add all other ingredients and chill until set.

Ham and Broccoli Casserole

¼ cup chopped onion
2 tablespoon margarine or butter
10-ounce package frozen chopped broccoli, thawed and drained
10 ¾ ounces cream of chicken soup
2 cups chopped, cooked ham
1 cup instant rice
½ cup process cheese spread (Cheese Whiz)
¼ cup milk
½ teaspoon Worcestershire sauce

Sauté chopped onion in butter until tender; set aside. Mix together broccoli, soup, ham, instant rice, Cheese Whiz, milk and Worcestershire sauce. Spoon mixture into a lightly greased 1 ½ quart casserole. Bake at 350 degrees for 20-30 minutes or until bubbly.

Cheese Ball

8 ounces cream cheese, softened
1 tube of garlic cheese
1 cup of parmesan cheese

Shape into a ball and sprinkle on paprika.
