Kitchen Adventures: Making red, white and blue holiday treats

The Fourth of July will be filled with picnics and family cookouts.


Potato salad will be plentiful, many a chicken will be fried and grills will be fired up for a variety of eats.

Whether you feast at a picnic, spread out on a blanket or surrounding the kitchen table, it’s an American tradition to celebrate our nation’s independence with food.

Actually, like many other cultures, it’s an American tradition to celebrate pretty much anything with food.

Using a patriotic color scheme for dessert can add to the day’s festivities.

The easiest way to do this is with a colorful combo of berries. Blueberries and strawberries, to be more specific.

There are many recipes for layered parfaits, but a nice twist is to make individual parfaits in small Mason jars. Using jars is a cute way to serve individual portions of many dishes.

The variety and combinations are endless. For mine, I layered strawberries, blueberries, fresh whipped cream and patriotic cookies.

It created a colorful treat that was just the perfect serving size.

A variety of other foods can be used in a patriotic parfait. Instead of strawberries, you can try raspberries. Instead of a cookie, use pound cake or angel food cake.

You also can add color to the whipped cream. I prefer fresh whipped cream, but any will do.

Topping the treat with red, white and blue sprinkles or tying a patriotic ribbon around the mouth of the jar are ideas for added touches.

Mia Wiersema, 18, had another idea for a simple patriotic treat.

She made the dish for a gathering of friends to snack on while watching the United States’ first game in this year’s World Cup.

She used blueberries and strawberries and added white chocolate-covered pretzels.

She placed blueberries at the far left corner of the plate and arranged them in a square to match that portion of the American flag. She then placed the strawberries and pretzels in horizontal rows down the plate.

The result was a sweet and edible version of the American flag.

I’ve also seen cakes decorated with blueberries and strawberries in the design of the flag on top.

Whatever the dessert, a little red, white and blue helps set a patriotic mood.

Berries also provide a balance to the other less-healthy food consumed that day.

Individual Red White and Blue Parfaits
1 pint package of strawberries
1 pint package of blueberries
Patriotic cookies
1 cup Heavy Whipping Cream
2 teaspoons sugar
Small 4-ounce Mason jars (as many as you need)

Put a bowl and mixer beaters in the fridge about an hour before preparing the whipped cream. Once chilled pour the heavy whipping cream in the bowl and add the sugar to make the cream a little sweeter. Whip until stiff peaks form and the cream has the consistency of whipped cream.  

Slice the strawberries. In the jars layer strawberries, cream, blueberries and the cookie in the red white and blue pattern until filled. Top with more whipped cream.
