When trying to find a recipe idea in a pinch, I go to two places. One is the pantry to see what I have on hand and the other is the Internet to look for recipes built with those ingredients.

On a recent snow day, I found a couple of great recipes to make out of crackers with ingredients you may have around the house. They’re a perfect snack.

The first is a recipe from the Mingus family, collectively known as the Mingi. The dish was brought to a New Year’s gathering earlier this year and was delicious.

Aptly called Alabama Fire Crackers, they are a spicy snack that are rich with flavor.

Most items in this recipe can be found in the average pantry and, if not, substitutions could be made.

It’s also simple to make. Put all the ingredients in a freezer bag, toss in crackers and let it sit overnight to absorb the flavor.

As a disclaimer, this snack has a kick and is slightly addictive.

The second recipe was found on Pinterest and is a salty, chocolate caramel snack that only needed two ingredients. It was made in about 3 minutes.

Rolo Stuffed Ritz Crackers are so easy you can make them with your children. It’s a sandwich cracker treat built with Ritz crackers with a melted Rolo candy in the middle.

It really is that simple.

Hopefully, there will be no more snow-day snack opportunities this year, but if you find yourself in a pinch, these are some simple snacks to make for any lazy afternoon or gathering of friends.

Alabama Fire Crackers
1 2/3 cups vegetable oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
2 (1 ounce) envelopes ranch dressing mix
3 tablespoons crushed red pepper flakes
1 (16.5 ounce) package multigrain saltine crackers

Place the vegetable oil, garlic powder, onion powder, black pepper, ranch dressing mix and crushed red pepper flakes in a 2-gallon plastic zipper bag. Seal the bag and smoosh with your hands to thoroughly combine the oil and spices. Place the crackers into the bag, seal and turn the bag over to cover the crackers with the spice mix. Let the bag sit for about one hour, then turn again. Repeat several more times until the crackers are well-coated with spice mix and allow the bag to sit overnight. Remove crackers and serve.

Preheat to 350 degrees. Place crackers salty side down and place one Rolo on the cracker. Bake 3-5 min to melt Rolo, then remove from oven. Add another cracker on top and push down a little. Let cool.
