Take a break with a quick, easy dessert

Take a break and make a simple brownie dessert.

Sometimes you just have to give yourself a pass and make something simple. That’s what I did this week.

My mom just had hip re­place­ment surgery and it has been a little busy around her house. She is doing great.

Even though we’ve been focused on her recovery, that’s not to say we haven’t been well fed. That’s the great thing about family and friends, they know how to rally together with food when you need it. We had a meal almost every night after she got home from the hospital and when we didn’t, there were plenty of leftovers.

Food, is a way to show love and kindness. It’s an expression of care. When you can’t physically heal someone, you can bring them a meal so there’s one less thing they have to do that day.

But back to the point, there are times in life when you are busy or just too tried to make something elaborate or from scratch. And it’s OK not to. Sometimes a box of brownie mix, some ice cream and a can of whipped cream can be just as fabulous as a dessert from a five star restaurant.

And that’s what I have for you on this food adventure, a free pass to get out of the kitchen and enjoy life. To sit down and take a needed break or take in the company of others.

You don’t have to be in the kitchen for a long time, find the perfect recipe and make a dish that requires multiple stages of prep time.

If you watch food competition shows, the one thing you notice a lot is they don’t look like they are having much fun. They only have a certain amount of time to make something and the pressure is on to make something fabulous.

We do that in our own kitchens as well. Sometimes there’s an hour between the time you get home from work and the next event on the schedule. You don’t have time for gourmet.

Or you have had a long day and just want to kick your feet up at the and have a sweet treat. The last thing you want to do is stand in the kitchen to create an elaborate dessert, or take the time to make if from scratch.

It is in these moments, brow­nies from a mix with a scoop of mint chocolate chip ice cream topped with canned whipped cream is the most amazing thing you’ve eaten in days.

Allow yourself a quick brownie sundae without the pressure of the world to make something perfect. Allow yourself to put the brownies in the oven and take a quick nap while they bake. Allow yourself to take a moment and enjoy something simple.

Give yourself a pass and relax.


• Brownie Mix – whatever kind you like

• Ice Cream – something that goes well with brownies

• Whipped cream

• Toppings – chocolate syrup, sprinkles, candy, etc. (optional)

Bake the brownies per the package instructions. You can serve the brownies warm or cooled.

Top with a large scoop of ice cream. Add whipped cream and other toppings if desired.

Kick your feet up and enjoy the rest of your day.
