  • Kitchen Adventures: Potatoes and recipe sharing

    One of this week’s Facebook finds is a recipe that quickly became a favorite dish  I’ll probably make again and again, Loaded Potato and Buffalo Chicken Casserole.

    There are a couple time-consuming steps to this recipe but the end result is worth it.

    Describing the taste doesn’t give it justice, but think about eating a loaded baked potato as a side to buffalo chicken and then put them all together for something delightful.

    There is a saying, “healthy is as healthy does.” I really believe that.

    In my 30 years teaching nutrition in home economics and family and consumer science, I always told my students there are a lot of ways to burn calories and there are a lot of foods that provide calories, but the final word on whether you gain or lose weight depends on calories in and calories burned.

    It is a great pleasure to introduce you to our April One of Hardin County’s Finest Cooks. I have known Dolores Perry since my days in

    4-H at least four decades ago. She not only was a 4-H leader for many years, she was a member of Hardin County Homemakers for 50 years.

    Dolores was nominated by Jacqueline Rogers, who is a former Hardin County Extension Service agent for home economics and has been friends with Dolores for many years.

  • Kitchen Adventures: Sweet treats from Facebook

    This week’s Facebook finds are on the sweet side. One is a pastry treat and the other is a three-level brownie, of sorts.

    The cinnamon cream cheese treat was posted about 100 times a few weeks ago on Facebook. That might be an exaggeration but I saw it a lot. Sometimes it was referred to as a cheesecake pastry.

    It is another easy find with just a few steps in preparation. Straight out of the oven, it was a little difficult to cut but after it cooled a bit and stiffened it easily was cut into squares.

    Those of you on Facebook might have seen a recent influx of recipes showing up on your timeline.

    For the next few weeks, our adventures will include Facebook finds, recipes that have popped up on the social networking site I decided to try. Some of them have been absolutely delicious.

    I was a little hesitant with the first one I tried because the post insisted it would taste just like a cheeseburger.

This year in my April/ May issue of Taste of Home magazine, there was an article titled “Funny Side Up.” It was a practical joke for April Fools’ Day, so tuck these recipes away for next year.

  • Kitchen Adventures: The Easter Bunny's kind of cake

    Sunday is Easter and along with the new Sunday duds and egg hunts, families will gather around the table once again for a holiday meal.

    After attending church to celebrate the resurrection, my family typically gathers at my mom’s house for our big feast.

    Along with the ham, deviled eggs and other treats, there usually is a table full of desserts.

    As with any holiday celebration, desserts can be part of the meal and decorative elements coordinating with the holiday theme.

    Today’s Recipe Roundup has some real winners.

    Fellow members of the Cecilia Homemakers gave me the the Breakfast Cookies and Cherry Dump Cake recipes. A former student, Phylis Taul Pendleton, shared the Breakfast Cookies by way of her mother, JoAnn. And I have a recipe for the most delicious dump cake from Jane Morgan.

    The Easy Fruit Pie is from Rachel Torres of Fort Knox. She is a former owner of a bakery in Louisville and is my new yoga instructor at Energy Sports and Fitness.

  • Kitchen Adventures: Chicken saltimbocca 'leaps in the mouth'

    Italian dishes go beyond a bowl of spaghetti and meatballs. It’s frustrating when some restaurants slap spaghetti sauce and mozzarella on a dish and call it Italian.

    While many Italian dishes have these two ingredients, they are neither a prerequisite for Italian cooking nor do the addition of these two ingredients suddenly make a recipe Italian.

    In fact, many Italian dishes use no sauce at all. Chicken saltimbocca is one of those dishes.

  • Dash of Class: Co-workers get cooking for charity

    After last week’s column on Warm Blessings, I have another wonderful community outreach done by some of the employees at Fort Knox National Co. Fort Knox National Co. is an electronic bill payment company specializing in payroll deductions for both military and civilians.

    Beyond their daily work, employees at Fort Knox National Co. in Elizabethtown have harnessed their culinary skills and found a way to raise money for Hardin County’s Angel Tree program.
