  • Dash of Class: Recipes for a special Valentine's Day dinner

    It has been a couple of years since I gave you some recipes for Valentine’s Day dinner, so this year I have several recipes for you to ponder over before you fix a special dinner for your family. Some of you might be having a romantic dinner out on the town tonight, but if not, there is no reason you can’t put a tablecloth on the table light a candlewith a candle for the two of you, the whole family or even extended family.

    wo of my favorite dessert recipes are Theresa Pickett’s Pumpkin Squares and a recipe for Peanut Butter Cup Cheesecake I got out of a cookbook years ago.

    Theresa, photographer Jill Pickett’s mom, says she thinks it’s the frosting that makes the Pumpkin Squares so good. I think she’s right, and the Cool Whip in the frosting makes it really light and fluffy. Although I generally start thinking of pumpkin recipes in October and November, I find myself making these at any time of year.

    This “One of Hardin County’s Finest Cooks” is no stranger to folks in Vine Grove and residents there probably have eaten the three recipes shared today at a pot luck supper or some other community gathering. She was nominated by her sister-in-law, also “One of Hardin County’s Finest Cooks,” Alta Hargan.

  • Dash of Class: Fond memories of a man who meant so much

    Joseph Francis Vaillancourt died Jan. 31, 1972. He was my dad, Daddy, and along with being my father, he was just a wonderful friend.

    It is hard to believe we lost him 40 years ago. He has been dead longer than I knew him — I was a 23-year-old with my own apartment, my own car and in my second year at West Hardin High School, teaching home economics.

  • The Best: Second-day asparagus makes best egg salad

    One of my all-time favorite meals is a special egg salad made with grilled asparagus served on a good multi-grain bread. I always have a loaf of Tastefully Simple’s Wheat Beer Bread made, so this is my bread of choice. The recipe for the egg salad originally came from Debbie Ferrante, who had a coffee café, Uncommon Grounds, just off the square in Elizabethtown some 15 or 20 years ago.

    You can make the egg salad with boiled asparagus, but it is much better with grilled or roasted asparagus.

    When we moved to Hardin County some 25 years ago and I started attending Radcliff Christian Church (Disciples of Christ), I fell in love with it. We had lived in Lexington previously and I had been employed as secretary to the minister of music at the church I attended, Central Christian Church (Disciples of Christ). The church in Lexington was wonderful; it was a very large church that had a great, large choir and many activities for people of all ages.

    Here we are in the first month of 2012 and we are continuing on our alphabetic tour of the grocery market. You might have forgotten but our last two letters were H and I and we learned about honeydew melon and Iceberg lettuce.

    This month, we will pick up with J and K. I want to tell you about jicama and kiwi.

    I truly love all vegetables, but I just forget about them sometimes. Broccoli is one that’s easy to forget. For years I would regularly steam broccoli and serve it with a little butter or lemon juice. Then I sort of got tired of that. Nowadays, I tend to use broccoli in a salad, and nearly always, it’s one of these two salads featured today.
