    I’m not sure why it has taken me so long to discover chocolate-hazelnut spread. I didn’t really think of trying it until last year.

    To my great joy, it is delicious, especially when used in a recipe to make a tasty treat.

    Last year I found a delicious truffle to make with the ingredient and last week I ran across a recipe for Nutella Cheesecake.

    Picture a mind officially blown.

    Some people like Halloween for ghosts and ghouls. Others, like me, are in it for candy and treats.

    I remember when you could bring homemade treats to school parties. Cookies, candy, popcorn and caramel apples also were a welcome treat.

    While schools have limited what homemade goods can be served in classrooms, you still can whip up tasty treats at home. Some are goodies the entire family can have fun making together.

    Here we are at the end of the month again and I have several interesting recipes for you.

    A reader emailed me and asked me about Mr. Gene Baskett’s Apple Banana Cherry Nut Bread from a recipe last year. It seems the original recipe didn’t specify the type of cherries. The Baskett family said it’s chopped maraschino cherries, the type often used for ice cream sundaes and such. This would be an excellent time to make some of these loaves and freeze them. The recipe calls for apples, which are in season.

    When the weather cools, there’s nothing like a chicken pot pie to make you feel all warm and fuzzy inside.

    But there are alternatives to the traditional pie. Chicken Pot Pie Cupcakes are one way to go.

    Before you get weirded out by the words “chicken pot pie” and “cupcake” in the same sentence, bear with me.

    These are delicious treats that can be served as an appetizer, finger food or main course.

    The dish isn’t really a cupcake. The individual pot pies just look like a cupcake or muffin after baking.

    Halloween is almost upon us and I know many of you are thinking about what type of treats you can give away or have for a Halloween get-together.

    The ideas seem endless and I’ve selected a variety to share. There is Halloween Cheese Pizza with Halloween cheese cutouts, Eyeball Tacos, Spider Web Brownies and a punch with gummy worms in an ice ring. I hope you treat some little ghouls with some spooky food. Happy Halloween.

    When my husband, Mike, and I were married 40 years ago, we were eager to start a family, but little did we know that wish wasn’t going to be filled any time soon. After trying for six years, we applied for adoption at a Catholic agency in Louisville. Three years later, we found out the wait was over and we were going to have a son. We had the name picked out for a long time, Joseph William — Joseph for my father and William for Mike’s Dad.

    For a foodie, the advent of fall means soup and chili season has arrived.

    Spicy tortilla soup is a good step between soup and chili. It’s spicy like chili but is a soup so it’s not as thick.

    I used less chili powder and cumin than the recipe suggests. Spices in a recipe usually can be adjusted for an individual’s taste.

    If you’ve cooked much with spicy chili peppers such jalapeno, you know there’s a risk of slight pain. Contact to the skin can cause a burning or stinging sensation.

    Tomorrow would have been my dear mother’s birthday. As the temperatures cool and leaves turn, I think of the wonderful things Mama used to make in the fall. Her Fresh Apple Cake and Apple Crisp are some of the things for which my mom was noted.

    The Brown Bag Dutch Apple Pie is another one of my favorites of hers. The technique for making it is interesting, but it turns out to be a great apple pie.

    But if she was in a hurry, she would turn to my aunt’s Easy Apple Cobbler.

  • Kitchen Adventures: Sage advice for fall pizza

    Sometimes, you learn a little about yourself when trying a new dish. On this kitchen adventure, I learned two things.

    One, there is such a thing as too much sage. Two, I’m not a fan of goat cheese.

    Because fall is my favorite time of year, a pizza with a harvest theme sounded like a good thing to try.

    To keep costs down, I altered the recipe.

    This month’s “One of Hardin County’s Finest Cooks,” Maria Barcenilla, is a native of Spain who moved to the United States 17 years ago with her husband, Frank Calvana, and daughter, Natalie.

    Maria teaches Spanish at Elizabethtown High School and fellow teacher Bonnie Young nominated her. Young said Barcenilla often entertains co-workers and close friends at her home and “dining at Maria’s house is comparable to any five-star restaurant.
